I’ve been hearing bits and pieces for some time now about this “underground” food experience that serves American wagyu beef in Miami. La Wagyeria is a unique, by-invitation-only concept that happens only once a week on Thursday evenings. Situated at 6300 Northeast 4th Court, it is probably Miami’s most exclusive food truck. If you are able to snag a reservation on their Instagram, you will be in for a treat.

It all started with five guys meeting every Thursday at this spot. One of them owned the land, and they would come and hang out and have a few drinks. One day, one of the guys brought a 14-pound piece of frozen wagyu meat. They had to wait until 4am until it was defrosted and they could cook it. It was a huge hit and a new idea was born. Now it is run by three friends – Raphael who is Venezuelan, Paulo, a Nicaraguan in the agriculture business, and Juan, a Spaniard whose family owns Mahou beer. He brings in all the ham from Spain.

The location is a little tricky to find, there are no signs or entry that you can see, but this makes it all the more private and speakeasy-like. In nice weather, you will be seated at a courtyard table, that includes their famous food truck. In inclement weather, you have to move inside, to their cool office space. They play a mix of chill music and you are offered some free wine, but most people bring their own and are given glasses and an opener. There is no corkage fee. The basic fee for dinner is $39 which includes a wagyu beef sirloin steak, with a side of hand-cut natural roasted potatoes and an organic, farm-to-table greenhouse salad. You can choose from a couple of starters, which are an additional price, like Iberico sliced ham and bread at a ridiculously low price of $10, or some excellent croquettes at $7. Sit back, relax and enjoy the starters. Each individual table is taken into a lab to get a lesson on the meat and select your own cut. You can also upgrade to a $49 or $59 dinner. We went with the ribeye, and at $59 it is a steal. Try ordering anything similar at a steakhouse and you will see what I am talking about. Return to your table and wait till they bring you your perfectly cooked steak. Ours were so tender and flavourful. I think I would ask for it less salted next time, otherwise, it was perfection. For now, they offer one dessert called, “The Pot”. It is literally served in a pot and consists of things like ice cream, pretzels, Oreo crumbs, and marshmallow. It had a great sweet and salty flavor and was $3.

How do they offer such great prices? They are distributors (you can also buy meat to take home while you are there). Their plan is to produce the meat on a farm in Okeechobee, certify it as USDA, and distribute it. They want everything to be farm-to-table and sustainable. They tell me that wagyu has less cholesterol than fish or chicken. I hope they are right because this place can easily become a habit that is hard to break. They are also in the midst of opening this business in Austin, Texas – the home of beef eaters.

They have two delivery trucks, for now, one at this location and another at their farm. They also do delivery on Uber Eats. They get lots of private orders, about 50-70 meals a day for corporate orders alone. Check to see if you are in their delivery area.

La Wagyeria is one of Miami’s most unique, creative, easy to digest, and memorable dining experiences.
