Maximo Bistrot :: Mexico City

If you’re looking for an informal restaurant with a cool vibe and excellent food, Máximo Bistrot is an outstanding choice. Chef Eduardo “Lalo” García is widely regarded as one of Mexico’s most respected chefs, and his remarkable story makes his success even more inspiring. Born into poverty, he emigrated to the United States where he worked his way through some of the country’s finest kitchens, including the legendary three-Michelin-star Le Bernardin in New York, where he honed the culinary precision and French techniques that continue to influence his cooking today. He returned to Mexico City and opened Máximo Bistrot in 2011. Since moving to its current Roma Norte location, the restaurant has continued to flourish, earning a Michelin star and a place among Latin America’s 50 Best Restaurants.

Chef Lalo was one of the pioneers of the farm-to-table movement in Mexico City, building close relationships with local farmers, fishermen and artisan producers. As a result, the menu changes constantly depending on what is at its seasonal peak, allowing the freshest ingredients to take centre stage. His cuisine blends the finest Mexican ingredients with classical French technique, creating dishes that feel contemporary, refined and globally inspired rather than traditionally Mexican.

The restaurant itself is every bit as impressive as the food. Housed in an industrial-style space in Roma Norte, it features soaring corrugated metal ceilings, white brick walls adorned with large woven tapestries, warehouse-style windows and plenty of greenery, including a beautiful tree that softens the room and adds warmth. Crisp white linen tablecloths and handcrafted ceramic plates made by local artisans add an elegant touch without taking away from the relaxed atmosphere.

As you enter, you’re greeted by a dry-aging cabinet showcasing premium meats and a glass-walled exhibition kitchen where the chefs work with quiet precision. The room is stylish, fashionable and buzzing with energy. It’s the kind of place where locals, food lovers and visitors all come together, creating an atmosphere that feels lively without being overwhelming.

While our dinner was memorable, the service unfortunately was not. It was exceptionally slow, and at times our waiter seemed to forget about us altogether. Thankfully, the kitchen more than made up for it. The ceviche was bright and beautifully balanced, the tostada was packed with flavour, and the chicken was one of the most outstanding dishes I’ve had anywhere. The skin was impossibly crisp, almost like Peking duck, while the meat remained incredibly juicy, tender and deeply flavourful. The tiramisu was also a wonderful way to end the meal and is not to be missed.

The beverage program is equally well considered, with creative cocktails and mocktails, artisanal beers, premium spirits and a thoughtfully curated wine list that complements the cuisine perfectly.

Máximo Bistrot delivers refined, ingredient-driven cooking in a room that feels effortlessly cool and full of life. Sophisticated without ever feeling stuffy, it is a restaurant that captures the spirit of modern Mexico City dining and is well deserving of its reputation.
