
I recently planned a trip to Quebec City after managing to snag a reservation at Tanière³, one of Canada’s most celebrated restaurants. The restaurant holds two Michelin stars, is ranked No. 9 on North America’s 50 Best Restaurants list, No. 3 on Canada’s 100 Best Restaurants list, and was the recipient of the Art of Hospitality Award.
I wasn’t entirely sure what to expect, other than knowing that Tanière³ offers an immersive tasting menu experience devoted exclusively to the terroir of Quebec.
Located within the walls of Old Quebec, a UNESCO World Heritage Site, the restaurant occupies a 17th-century building with historic underground stone vaults. Legend has it that the original owner was sent from France by the King to participate in the fur trade, using these very vaults to store pelts centuries ago. Today, those same spaces have been transformed into one of Canada’s most extraordinary dining experiences.
The evening begins before you even step inside. Guests receive a secret code on the day of their reservation, which unlocks a bright yellow door hidden along a quiet street. Crossing the threshold feels like entering another world. A winding, forest-inspired passageway, complete with sounds of nature and artistic installations, leads to reception. The atmosphere is theatrical, immersive, and immediately captivating.
The experience unfolds through a series of four distinct spaces. We were welcomed into the first vault, home to the bar, where a thoughtfully crafted non-alcoholic beverage was served to awaken the senses. A collection of seasonal snacks soon followed, each presented on elements inspired by the forest — twigs, tree trunks, stones and branches. Every bite seemed more inventive and delicious than the last. During this portion of the evening, we also enjoyed several inspired craft cocktails that perfectly complemented the experience.
From there, we were guided toward the dining room, passing the chef’s table along the way. With its oversized leather chairs overlooking the open exhibition kitchen, it immediately became my preferred seat for a future visit. From this vantage point, guests have a front-row view of Chef François-Emmanuel Nicol and his talented team as they create a highly seasonal menu showcasing ingredients from Quebec’s forests, rivers, farms and coastline.
The second vault is warm and intimate, draped in rich burnt-orange fabric with black wood tables spaced comfortably apart. Carpeted floors soften the room, while dim lighting and a striking hanging mobile create a sense of calm and elegance.
It is here that the main courses are served. We began with fiddleheads and garlic, a fleeting seasonal delicacy available for only a few weeks each year. One of my favourite dishes featured scallop and caviar wrapped in a delicate layer of potato. This was followed by a beautiful combination of lobster, morels and asparagus. An intensely flavourful beef course paired white asparagus, mushrooms and herring in a masterful expression of umami.
One particularly memorable dish was partially prepared tableside. Honeycomb was scraped directly from its frame and caramelized in a pan with apple, parsnip and other ingredients before being incorporated into a quail course. The resulting sauce was absolutely sublime. A beautifully prepared lamb dish completed the savoury portion of the meal.
Throughout this stage of the evening, we enjoyed a selection of remarkable wines that elevated each course.

The final chapter of the experience takes place in the last vault, which was perhaps the most magical room of all. Hundreds of delicate origami birds floated from the ceiling, while slender birch trees appeared to grow directly from the tables. It was here that a series of desserts arrived, each one presented with an almost ethereal beauty. The dishes reflected the forests, seasons and natural surroundings of Quebec, bringing the meal full circle.
What impressed me most was the extraordinary creativity and thoughtfulness behind every course. Familiar ingredients were transformed through technique, imagination and storytelling, while still respecting the subtle flavours of Quebec’s northern landscape. Every detail was meticulously orchestrated to delight not only the palate but all the senses.
The service was equally exceptional. The team was warm, polished and remarkably knowledgeable, effortlessly guiding guests through the intricate ingredients, techniques and stories behind each dish.
To say I was impressed would be an understatement. Tanière³ is more than a meal; it is a journey through Quebec’s history, culture and terroir. It represents hospitality at its finest, delivered with professionalism, precision and heart.
Without question, it was one of the most memorable dining experiences I have had in Canada.
