One of Miami’s most highly anticipated restaurant openings, Aviv by Chef Michael Solomonov, made its debut at the 1 Hotel South Beach on March 14, 2025—and I couldn’t help but think, how lucky are we to have so many world-class restaurants opening in Miami? With an ever-expanding dining scene, the choices are endless, but this one deserves a spot at the top of your list.

For those unfamiliar with Michael Solomonov, he is an Israeli-born, James Beard Award-winning chef known for redefining modern Israeli cuisine. Along with his partner Steve Cook. He has built a culinary empire, including the acclaimed Zahav and Laser Wolf in Philadelphia. At Aviv, he masterfully blends ancient cooking techniques with the bold, contemporary flavors of Tel Aviv, all while embracing the lively spirit of Miami.

And what a setting it is! Located on the ground level of the 1 Hotel the 132-seat restaurant has been transformed into a stunning indoor-outdoor space with a romantic, mid-century modern aesthetic. Think coquina stone, glowing white flowing gauze columns, and lights as well as soft monochromatic hues of white and beige that add to the ambiance. A private dining room offers an intimate space for special occasions.

Dining at Aviv is best enjoyed with friends, so you can share and savor as many dishes as possible. Start with a selection of hummus and salatim, a vibrant spread of small vegetarian plates like beets with tahini, Moroccan carrots, twice-cooked eggplant, and spicy fennel—all served with the most divine homemade bread.

Next, dive into the mezze (small plates). We loved the warm stuffed dates filled with goat cheese, almonds, and citrus, and the halloumi baklava with quince and pistachio—so delicious, I found myself thinking, please sir, I want more!

For mains, the chicken pargiyot and beef shashlik were both excellent, but if I had to pick one, the beef was the clear winner. The dorade with sea bean tzatziki was another standout, cooked to perfection.

The cocktail program is just as impressive. We sampled two spritzes, both of which were excellent:

• 24th and Collins – a refreshing mix of strawberry-infused Aperol, Prosecco, fresh cucumber, and Fever Tree cucumber tonic.

• Ha’Maravi – featuring Tito’s vodka, rosé Prosecco, rose water, and club soda.

Beyond the spritzes, the bar offers creative craft cocktails, beers, seltzers, and a well-curated global wine list.

Dessert was an absolute delight. The Key Lime Knafeh—a playful nod to Miami—was spectacular, while the brown butter soft serve and whipped guava sorbet were equally memorable.

Simply put, Aviv is a stellar new addition to Miami’s dining scene, and I already know I’ll be hitting redial for a reservation. Recommended.
